Look at sample programm BCALV_TREE_DEMO,

and especially at the methods ADD_NODE or  DELETE_SUBTREE of class CL_GUI_ALV_TREE.

For implementing the context menu, consider event ITEM_CONTEXT_MENU_REQUEST.
