Java 1.7 Update 60 or higher will work fine but the problem is that only Java 1.8 is currently supported by Oracle.
It all depends if you have extended support from Oracle on JAVA 1.7, otherwise would recommend Java 1.8 with IE 11 so all options are fully supported by the vendors.
